Pork Chops in White Wine Sauce With Capers & Black Olives

One of the hardest thing for me to prepare was always pork meet. I never know how to prepare it to be soft and delicious. Recently I purchased it again and tried a new recipe, for me personally it was revelation and my boyfriend kept asking to make it again.

Pork tastes really great, it’s soft and a sauce is marvelous! I usually prepare it with couscous but you can also make it with rice, pasta or potato.

Preparation time: 45min

Ingredients
500g pork chops
1 onion
3-4 cloves of garlic
0.5-1dl white wine
4-5 cherry tomatoes
1.5 soup spoons of capers
8-10 black olives (without a pit)
Olive oil
Flour
Fresh parsley
Spices (salt, origano, spicy red pepper, sweet red pepper)

Preparation
1.Clean and cut onlion, mince garlic and cut olives and tomatoes to halfs.
2.Warm olive oil on bigger pan, put some flour on the plate and dip one side of each pork chop in flour. Fry the meat on oil first the floured side (each side about 2 -3 min.) on mid. temperature until they get a bit of the color.
3.Set meat a side (keep it on a warm place). Add a bit more olive oil on warm pan you were using for meat and fry onion and garlic a bit until golden. Add 0.5 wine and 0.5 warm water, mix, add meat to it, cover and cook for 5min.
4. Add cherry tomatoes, olives, salt, pepper and spices and capers, mix. Make sure meat is covered with sauce (if not add a bit more white wine and water).
5. Cover and cook for 30 minutes on mid. temperature. Sprinkle parsley 5 min. before done with cooking. Check occasionally to see if there is enough liquid, if not, add a bit more water). If you want a thicker sauce, mix half a glass of water and 1 spoon full of flour and add 5min before it’s done cooking.

Extra tip!
I don’t like to use dry parsley so I just buy a bunch on weekends, dice it and freeze it in a zip lock bag for the whole week to use fresh in new recipes! :)
